3 Ingredients for an Unforgettable Fish Soup!

This Simple Fish Recipe Will Infatuate your Loved Ones!

Again, I was overcome by the desire to recreate my favorite fish recipe. When I was watching my beloved cooking show „Chef`s Table“, the Indian celebrity chef Gaggan Anand was talking about the 4s, that are essential in any recipe:

  • salt
  • something sweet
  • something sour
  • something sharp

Salt and hotness are easy to add, hotness comes from pepper, chili, cayenne, hot paprika and so on. For sweetness, use sugar, fruit, preserves, chutneys or honey. For some acidity, use lemon, lime, vinegar balsamic vinegar or sumac.

The dried fruits of the so called staghorn sumac make for a wonderfully sour touch. You can get this spice at Bremer Gewürzhandel among others.

Here, I will show you my beloved fish recipe, that you can prepare with any fish that has relatively firm flesh.

For 4 people you need:

  • 700 g Victoria sea bass or similar
  • 1 l veggie stock
  • 1can of coconut milk (250ml)
  • 1 large onion
  • about 3cm  fresh ginger
  • 1 stalk of leek
  • 1 dash of soy sauce
  • 1 tsp brown sugar
  • 10 small cherry tomatoes
  • 1 lemon or lime
  • 1 bunch of fresh cilantro or parsley
  • 20 g butter
  • 2 EL olive oil
  • 3/4 tsp turmeric
  • 1/2 tsp saffron strings
  • 1/2 tsp sumac
  • salt and pepper to taste

Finely chop the onion and the ginger and fry in butter with the tomatoes. Deglaze with the stock and add the coconut milk. Slice the leek into rounds, add and boil on medium. Add soy sauce, the juice of half a lemon, sugar, olive oil and the spices and cook on low for 30 minutes. Cut the fish in bite sized pieces, add to the soup and cook for another 10 minutes. Season with salt and pepper and garnish with cilantro before serving.

And don`t forget for your dress to be matching! This time, yellow goes really well with the dish.
