How to work magic with carrots

Yesterday, my fridge was expolding with carrots and I just didn`t feel like carrot salad. I usually prepare my favorite quiche with tomates, why not try carrots? This quiche is light and fluffy. An amazing summer dish. The stiff eggwhites you fold in make it as light as a feather.

Try it!  It`s simple, fast and very delicious. You can prepare it spontaneously for a quick bite inbetween or if visitors are due. A summer salad or some smoked fish go perfectly with it. The dough is a no brainer.

I love kneading the dough until it gets really velvety and smooth. The yogurt makes it really smooth. I keep trying new dough variants. This is one of my favorites.

And of course you have to make sure the outfit for cooking is perfect. Shiny clothes match a shiny dough. This way, you can celebrate the preparation and yourself. I guranatee you, you will be able to taste it. You can taste your love for the ingredients, the joy and the gratitude.

I always jump with joy when I`m allowed to get started.  Deep gratitude flows through me when I am lucky to create a new dish every day. And even more happiness and gratitude flow through my veins for being abe to share these ideas with you.

Yesterday, I was so thrilled about the dough that I kissed it. Being able to get excited about details is wonderful!

For 4 people you need:

Für den Teig:

  • 200 g wheat flour (feel free to sub half with whole grain flour or spelt flour)
  • 150 g yogurt or curd cheese
  • 70 g butter
  • salt

For the filling:

  • about 500 g carrots
  • 2 eggs
  • 150 g cream cheese with herbs
  • 150 g yogurt or curd cheese
  • some nutmeg
  • freshly ground pepper
  • 1 tsp chili flakes
  • salt

Knead flour, cheese/yogurt with butter and salt to form a smooth dough. The dough works out even better when you melt the butter at low temperature before starting.

Peel the carrots, chop them into rounds and boil them in salt water for about 7 minutes. When they are still nice and crunchy, pour off the water.

Preheat oven to 200°. Roll out the dough in a greased quiche tin and form a nice rim. Prebake the dough for about 10 mins.

Separate the eggs and beat the eggwhites until stiff. Mix the creamcheese with the yogurt/curd cheese and the eggyolks and season. Carefully fold in the eggwhites.

Spread the carrots on the prebaked dough and pour the cream over them.

Bake for about 15-20 minutes at 200° until the surface turns slightly brown.
